This wine has jasmine, honeysuckle, key lime and lemon zest, with citrus and stone fruit on the palate. It suits anyone who likes a dry, precise Riesling.

The fruit all comes from two hectares of Rocky Point Vineyard with a northerly aspect, on schist soil that's high in minerals. Instead of tank ferments, the juice goes into old barrels with wild yeast, and the wine is held back and released after at least a year in bottle - this brings texture to the wine.

What it tastes like

This wine has exuberant aromatics that unfold in the glass. The aromas on the nose are jasmine and honeysuckle, key lime, lemon zest and spice.

On the palate there's citrus and stone fruit, structured and precise, with freshness carrying through. The wine keeps developing in the glass through the evening.

One unexpected match is a mild chicken korma, because the wine's floral, citrus lift cuts the cream and the gentle spice.

Who makes it

Prophet's Rock is in Bendigo, Central Otago. Paul Pujol is the winemaker.

The fruit is handpicked and whole-bunch pressed over 5–6 hours. It's fermented with wild yeast in old barrels, which takes 3–4 months, then aged on its gross lees (the spent yeast cells that add body) without racking until bottling. Yields on the Rocky Point block are 28–30 hl/ha, about 3.5–4 t/ha.
