Sauvignon Blanc.  Whole bunch pressed straight to barrel with no added enzymes, SO2 or yeasts.

Wild natural fermentation, followed by 100% malolactic fermentation with SO2 added after fermentation. Lees stirred at the on-set of malolactic fermentation and left to settle for 9 months in 265 litre cigar and some 600 Demi Muid barrels.

Assembled and racked to two 5 year old 600 litre Demi Muid barrels for a further 9 months. It was then racked to tank where it naturally settled for 2 months to allow bottling, unfiltered.

"Complex and detailed bouquet with layers of citrus peel and white spice then lemon and cape gooseberry, wild flowers and a sandy mineral suggestion. A dry wine on the palate with perhaps a delicate spritz to the acid line line. Flavours of citrus and peach then wild flowers and orchard fruits follow.
